Pumpkin Pie Pops


It's too hot in Texas, people.

Some people are wimps in cold weather; I'm totally a hot weather wimp. I don't mind a nice 85 degree day and sunshine, but this 100 plus and humid weather in Texas is just not cool. Pun totally intended.


So, what's a girl to do when she's dreaming of fall--boots, leggings, scarves, pumpkin spice, pumpkin bread, pumpkin spice lattes, crispy leaves, candles flickering in a home that's not 80 degrees to save money on a/c costs...

Well, she makes pumpkin pie pops.


I honestly had no idea what I was doing when I made these and was sure that I probably wouldn't like like them.

But, then I ate one and liked it. A lot.

Cool for the summer. Pumpkin spicey enough for the slight pumpkin spice addict in me.

Plus, they were so quick to make and aren't half-bad for you to eat.

To me, they taste like frozen pumpkin pie. So, if you like pumpkin pie, you'll probably enjoy these :) Plus, you can start stocking up on pumpkin before fall arrives and it's always missing from the shelves! I also added a little coffee and espresso powder to jazz them up a bit. Honestly, I can't really taste any coffee taste, but I think it may give them a deeper flavor. But, those ingredients could be replaced or deleted if you'd rather not have any coffee in your pops. Try them...I'm curious to know what you think :)


Here's the recipe:

Pumpkin Pie Pops

Makes approximately 8 pops

Ingredients:
1 can of canned pumpkin
1.5 cups of almond or regular milk
1/3 strong coffee (replace with milk if you'd rather not have the coffee)
1 tsp cinnamon
1 tsp pumpkin spice
1 tsp instant espresso powder (optional)
1 tsp molasses (optional)
2 tbsp sugar

Directions:
1. Mix milk and instant espresso powder together
2. In a large bowl, mix all the ingredients together until nice and smooth.
3. Pour mixture into dixie cups or Popsicle molds. If using dixie cups, place in freezer about 15 minutes before inserting Popsicle sticks.
4. Freeze and eat!
