Here's a recipe that I created while searching for a delish recipe for healthy banana bread.
3 or 4 bananas
1/2 cup mashed carrots
3/4 cup of sugar
1/4 cup of plain yogurt
1/2 cup of white flour
1 cup of whole wheat flour
1 teaspoon of baking soda
1 teaspoon of vanilla
Cinnamon to taste
Pre-heat oven to 350 degrees
Soften and smash/blend carrots. I like to boil them on the stove top and add a cinnamon stick to the water--it helps the carrots soak up cinnamony goodness. At least I'd like to think so! Then, I stick them in the blender and blend them up. No carrots? I think applesauce or mashed apples would work the same!
Mix together bananas, carrots, eggs, sugar, and plain yogurt. After they are all mixed up together, add baking soda, vanilla, salt, and cinnamon. Finally, throw the flour in and stir up well.
Put it all into a greased bread pan and bake it for about 60 minutes. You could also make them into muffins!
It was fun to tweak with other banana bread recipes and create this seriously wonderful (even without butter!) banana bread.
